Protein sauces: when protein stops being sweet

In short. Protein sauces are classic condiments enriched with protein. Biobontà has developed a protein mayonnaise with 12 g of protein per 100 g and a protein ketchup with 5 g per 100 g. Both qualify for the EU “source of protein” claim. We make them in private label for protein brands in Italy and across Europe.

Open the pantry of anyone who trains, counts macros or simply wants to eat better. You will find chocolate bars, puddings, cookies and spreads. And a tub of powder to shake with water.

All sweet. Or all liquid.

Yet nobody has a protein bar for lunch. At the table we eat savoury: a sandwich, a salad, a bowl, grilled chicken, roast potatoes. And that is exactly where protein has been missing, in the most everyday moment of the meal. Protein sauces are made to fill that gap.

The protein market has a gap on the shelf: savoury

Protein is the nutrition trend of the decade. Innova Market Insights puts “Powerhouse Protein” at the top of its Top 10 Trends for 2026, and notes that protein has moved beyond sports nutrition into almost every food category (Innova, May 2026). According to Mintel, 53% of UK consumers say high-protein foods keep them full for longer (NZMP, Mintel data 2025).

But where has the offer grown? Mostly into desserts and snacks. Today the European protein shelf looks like a pastry shop: bars, cookies, yoghurts, puddings, ice creams, spreads. For consumers this creates two problems:

  • Sweet fatigue. After the third bar of the week, the appetite for “chocolate” protein fades.
  • Protein cut off from the meal. Shakes and bars are eaten as supplements, outside real meals. Lunch and dinner stay uncovered.

For a protein brand, savoury is still a largely open space. And among savoury products, condiments have a unique advantage: they don’t ask consumers to change their habits. They simply go on what people already eat.

Protein mayonnaise and protein ketchup: two classics, one new purpose

We chose Europe’s two best-loved condiments. They have the taste, texture and uses consumers already know. On top of that, they bring protein to the plate.

Protein mayonnaise – 12 g of protein per 100 g

A traditional mayonnaise usually contains 1–1.5 g of protein per 100 g. Ours contains 12: about ten times as much. It stays creamy and smooth, without the chalky texture that often gives protein products away. It is also available in an organic version.

Protein ketchup – 5 g of protein per 100 g

Ketchup is the condiment of children, athletes and families. Ours keeps the full tomato flavour and adds 5 g of protein per 100 g. It is the right sauce for brands that want to reach a broad audience, not just athletes.

How they are used

For buyers the point is simple: a protein sauce raises the protein content of a dish without changing its recipe. For anyone selling ready meals, meal kits or bowls, it is a quick way to improve the nutrition label.

"Source of protein": a fully compliant claim

In the protein market the label matters as much as the product. That is why we formulated our sauces starting from the regulation, not from marketing.

Regulation (EC) No 1924/2006 sets two levels of claim:

  • “Source of protein”: at least 12% of the product’s energy comes from protein.
  • “High protein”: at least 20% of the energy comes from protein.

Both our sauces meet the threshold for the “source of protein” claim. Customers can therefore use it on their labels and in their communication, in every EU country.

This is no small detail. In a sauce, fats and sugars weigh heavily on calories, and reaching the threshold takes real formulation work. Every buyer in this sector runs that calculation in seconds: we ran it first.

Private label protein sauces: why choose Biobontà

We don’t sell protein sauces under our own brand. We develop and produce them for brands that know their audience. It is a deliberate choice: your brand, our kitchen.

Biobontà is the brand of Tuttovo Srl, an Italian producer of gourmet sauces. For years we have worked in private label for companies in Italy, across Europe and outside the EU.

What we bring to your project:

  • Certified safety. BRC-certified plant with grade A+ (certified by Bureau Veritas), the standard required by international retail.
  • Organic and conventional. We produce both lines. Our organic production is controlled by Bioagricert.
  • Egg expertise. We work with egg yolk every day, including as a supplier to the ice cream and pastry industry. For a mayonnaise, it is the decisive raw material.
  • Italian taste. We come from gourmet sauces: for us, a protein sauce must first of all taste good.
  • Export experience. Labels, languages and documents for European and non-EU markets are part of our daily work.

How we work, in four steps:

  1. You tell us your target, channel, desired claims and price positioning.
  2. We start from our base recipes and adapt them: taste, protein content, organic or conventional.
  3. We send samples with the nutrition sheet and claim verification.
  4. We produce under your brand, in the format you choose, for retail or food service.
